What are those 2 little circles on the top left of the phone, to the left of the ear piece.

They are light sensors, During a call, They detect when you bring the phone up to your cheek to talk, And dim the brightness of your screen to conserve your battery....

random thought: so a screen protector that covers those sensors would NOT essentially affect its function would it?

That issue is covered here somewhere, But yea you have to be careful with the covering of the sensors, some of the Cases / Screen protectors give issues, while others dont... Read through the site or search in the search box.. i am sure you will find the thread...
